Coconut Flour Blueberry Muffins

I recently found this recipe on Pinterest and wanted to share because I know a lot of us are trying to minimize our gluten intake and keep things as lean as possible, especially during the summertime.

 

I made these muffins to bring to the lake for Memorial Day weekend. They were a tasty quick snack to have on hand, and I think everyone really enjoyed them!

 

I have made a lot of coconut flour muffins over the years, and this recipe from Paleo Grubs is by far one of the best recipes that I have tried. The muffins practically taste like cake. And the icing on the cake, is the almond flour streusel topping that adds a little extra, coconutty sweetness.

 

 

The only change that I made to the recipe is that I added about a teaspoon of cinnamon to the coconut flour mix.
