I know its not technically soup season anymore, but this recipe is so light and delicious it is something that I like to cook year round. This recipe is also gluten free!
Anything I have ever eaten with vermicelli rice noodles has been delicious, so when I found this recipe on Pinterest I knew it would be a favorite of mine that I would make over and over again.
In the soup pictured, I added some baby bella mushrooms to because I had some in the fridge that I needed to use up. It is delicious either way! So savory, and yummy.
