Carrot  Crasin Coconut Flour Muffins

Who is trying to eat more whole foods this year? No matter how much I try to improve my diet, I still love eating carbs! To satisfy my carb cravings, but still eat something nutritious, I enjoy making gluten free muffins with coconut flour. They are high in protein, so they stick with you longer than a regular muffin made of flour and sugar. Despite being a “healthy muffin,” they are also tasty!

 

I found this recipe on Pinterest, and thought they turned out very good, so I thought I would pass this recipe along. It is originally from wellfedhome.com. The only modification I made was to add more cinnamon than the recipe calls for because that is just how I do things. Click the picture below to take you directly to the recipe!
